Pesto and Feta Tart

Music: Paul Russell~ Lil Boo Thang

The perfect accompaniment to summer picnics.

Ingredients:

  • Filo pastry

  • Small jar of basil pesto

  • 4 large tomatoes, cut into slices

  • Feta

  • Fresh basil leaves

  • Handful of pine nuts

  • Olive oil

Instructions:

  • Flatten out a sheet of shop-bought filo pastry. Use a knife to indent a 1cm wide border around each side.

  • Spread basil pesto across the inner rectangle, keeping the border free.

  • Arrange the sliced tomatoes over the pesto so that they overlap slightly.

  • Brush the border of pastry with olive oil. Sprinkle the tomatoes with a touch of salt.

  • Cook in the oven for about 15-20 minutes, or until golden. If you are using an Electrickit Advanced Aga, cook in the top oven at 200c.

  • Take out of the oven and crumble a generous amount of feta on top, followed by a sprinkling of pine nuts.

  • Cook for 5 more minutes, then arrange a small bunch of fresh basil leaves on top of the finished tart.

Raspberry and White Chocolate Swirl Pastries

Music: Labrinth ~ Let the Sunshine

We tried this treat for Easter. Easy to make and a lovely mixture of sweet and sharp to cut through all that Easter chocolate overload!

Ingredients:

  • Roll of ready made puff pastry (or if you want, make your own!)

  • 500g or so of crushed fresh raspberries

  • A bar of white chocolate, cut into small chunks

Instructions:

  • Roll out your pastry into one long, thin strip.

  • Apply generously with crushed raspberries so that it completely covers the pastry, then sprinkle with white chocolate.

  • Starting from one end, roll your pastry up until it creates one big swirl.

  • Using a knife, cut the roll into segments about 2cm thick.

  • Place onto a baking tray lined with Bake-o-glide. Leave in the fridge for 20 minutes or so if you have time.

  • Set the Electrickit Advanced top oven to 200c and bake for 15 to 17 minutes until nice and golden..

-Puff pastry
-Biscoff
-Egg (egg wash)
-Icing sugar
-Lebkuchen stars

Method:

-Roll out your puff pastry horizontally.
-Cover the left half of the pastry with biscoff (warming the biscoff will make it easier to spread).
-Fold the uncoated pastry over the biscoff half.
-Cut into 8 equal strips.
-Fold each strip back and forth over itself (starting off big and getting smaller) to form a Christmas tree shape.
-Pierce a stick through the middle of the tree and lightly brush your trees with egg wash.
-Cook in the top oven of your electrickit at 200 for approximately 15 mins or until golden.
-Sprinkle some icing sugar over. Place a lebkuchen star on the top of each tree, and push the stick through to finish.

-Puff pastry (homemade or shop bought)
-Honey
-Rosemary
-Cranberry sauce

Method:

1) First fry your pancetta until golden. I did this on the electrickit’s induction hob (level 2).

3)Cover with a square of puff pastry (you can make these any size you wish).
4)Fork the edges and brush with egg wash.
5)Bake on the middle shelf of the top right oven of your electrickit for approx 15 mins or until golden brown.
6) If you wish, add more brie and rosemary. We certainly did- you can’t go wrong with more cheese!
7)Drizzle over the Balsamic glaze and enjoy.
