The Very Best Oaty Fruit Crumble
My crumble recipe is based on an old family favourite, honed over the years to what, I'd like to think, is pretty close to crumble perfection.
Ingredients:
-450g apples - a 50/50 mix of bramleys and cox works well
-75g caster sugar
-175g plain flour (or use wholemeal for extra virtue points)
-40g porridge oats
-50g light brown sugar
-100g unsalted butter
-1 tsp ground cinnamon
-1tsp ground ginger
-A little lemon juice
Instructions:
-Peel and dice the apples into 2cm cubes. Sprinkle with lemon juice to prevent browning and mix in the caster sugar.
-Rub the butter into the flour and spices. Stir through the oats and sugar.
-Sprinkle the fruit with the crumble topping and press down lightly, running over with a fork for a nice even texture.
-Cook in the Electrickit (or eControl) on the middle runners, with the oven set to 200c.
-Alternatively on a traditional 2 oven Aga, cook on the fourth runners of the roasting oven for half the cooking time or until browned, before moving to the top of the simmering oven for the remaining time.
-On a 3 or 4 oven Aga, cook in the baking oven on the middle runners.
-The crumble is ready when lightly browned and the fruit starts to ooze up through the topping at the edges - around 40-45 minutes.
